Ingredients:


Pastry:
2 cups Semolina
½ cup sugar
4oz butter
1 tsp baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla
2 beaten eggs
½ cup yogurt
3oz pealed almonds

Syrup:
Sugar -- 2 cups
Water -- 1 1/2 cups
Juice from 1 lemon
1 tsp Orange blossom extract or rosewater


Directions:


Prepare the syrup:
Cook the sugar and the water in a pan in medium heat for about 5 minutes while stirring to avoid burning of the sugar.
When a smooth syrup is achieved, add the orange blossom or rosewater, stir well and set aside to cool down

Prepare the pastry:
In a bowl mix the semolina and
In a mixer in medium speed, mix the butter and the sugar to get a smooth paste
Add the eggs one at a time while mixing
Add vanilla while mixing
Add gradually the semolina and the yogurt ½ cup of one then the other while mixing
Pour the batter into a greased 9x12 inch baking pan
Flatten the top and then using a knife cut diagonal line to create diamond shapes
Stick an almond in the center of each diamond
Bake in pre heated oven in 350 deg F for about half hour until golden
Remove from oven and pour syrup evenly all over the top one layer at a time to let the syrup soak in
Set aside to cool down
Cut the diamonds and serve
