Ingredients:


1 lb chicken breast
1 cup flour
½ lb good quality bread crumbs
2 eggs
2 tsp good quality mustard
½ tsp baking powder
1 tsp black pepper
1 tsp salt
Oil for frying


Directions:


Slice the chicken breast to ¼ inch thick (or thicker if you prefer)
Use paper towels to absorb liquids
Deep the slices in flour and shake to remove excess of flour
Beat the eggs with the mustard
Mix the bread crumbs with the baking powder, the pepper and the salt
Deep the slices in the egg and then in the bread crumbs
Lay the slices on a towel and let them rest for 5 minutes
In a pan heat oil to be about ½ the thickness of the slices
Fry the schnitzel for about 2-3 minutes until golden and then turn them upside down to fry the other side
Remove and let them rest on paper towels to absorb excess of oil
