8.8 oz. butter &/or margarine (PARVE USA)
12.5 oz. flour
3.5 oz. sugar
2 Tablespoons Brandy ("777" Kosher Brandy)
1 teaspoon baking powder
1 tablespoon lemon zest
12.5 oz. Peach jam
Preheat oven to 350 F.
Sift the flour and mix it with the baking powder.
Put it in a bowl, add the sugar, butter, yolk, lemon zest and the brandy.
Knead all of the ingredients until they become a soft dough.
Separate the dough into 2 pieces, open one up and put it into a 10" pie dish with butter.
Before baking, pick it with a wooden toothpick.
Bake it for 30 minutes.
Take it out and spread marmalade on it.
With the other piece of dough make strips, which you are going to put on the pie.
Bake it for 35-40 minutes at 350 F.
Take it out when it is ready leave it to cool and then cut it into pieces.
