Ingredients:


· 2 sticks margarine, unsalted

· 1 cup canola oil

· 1 Tbs. extra virgin olive oil

· 2 cups sugar

· 1 cup orange juice and 1 tsp. orange peel (scrub & check for thrips)

· 6 eggs

· 2 cups chopped almonds

· 3 tsp. baking powder

· 2 tsp. anise flavoring

· 7-8 cups flour, sifted (check for infestation)


Directions:


1. In a mixing bowl blend well softened margarine, canola oil, olive oil, and sugar until creamy ~about 10 minutes.

2. Add eggs one at a time.

3. Add flour and baking powder, alternating with orange juice and peel.

4. Add anise and blend until you make soft dough.

5. Separate dough into 6 equal loaves.

6. Form them as you would when making Italian biscotti.

7. Score them for later cutting.

8. Bake at 350°F for 30-35 minutes.

9. Cut them where you scored them.

10. Lay them flat and bake for added 15 more minutes or until golden brown.
