(Reshteh is a delicate kind of linguini, if possible buy it if not use thin linguini)
2 lb linguni
½ lb black-eye beans
½ lb lentils
1 cup chopped fresh mint leaves
4 sliced onions
1 cup thin yogurt (optional)
2 tbsp flour
Olive oil
salt
black pepper
Directions:
Soak chick-peas, black-eye beans, and lentils for two hours
Fry onion to golden
Save half of the fried onions to be used later
Add all beans, salt, and pepper and 3 cups of hot water and cook over medium heat for half hour
Add herbs and cook for 5 minutes
Dissolve flour in a cup of cold water add and mix Add the linguini and cook over low heat for 20 minutes
Serve with yogurt (or without), sprinkle fried onion and fried mint over top
