Ingredients:


1 kg whole rice (preferably round)
2 bunches of green onion, chopped
1 stalk of celery, chopped
Fresh cilantro (optional)
1 bunch of parsley, leaves only
1 tablespoon fresh ginger, grated
2 garlic cloves
1 cup fine olive oil
Grated shell from 1 lemon
Juice from 1 lemon, filtered
Salt, to taste


Directions:


Soak the rice in a bowl with clean water to cover. Transfer to the refrigerator for at least 3 hours and up to a full day. Remove and drain.
Process the green herbs in a food processor for a smooth paste. Add the rest of the ingredients and process again
Move the rice to the pot.
Add water to cover
Add the green mix to the rice and mix
Cook without cover on high heat to boil, stir occasionally
Reduce heat, cover the pot and cook for 1/2 hour
Turn off the heat and leave covered for 10 minutes
Fluff it and serve
