2 lb potatoes
2 chopped hot green peppers
2 cups chopped cilantro leaves
1 tbsp mustard seeds
1 tsp cumin seeds
1 tsp turmeric
3 tsp salt
4 tbsp olive oil
4 tbsp lemon juice
Frying oil
Dip mix:
1 cup garbanzo flour
2 tsp hot paprika
2 tsp salt
4 tbsp olive oil
Directions:
Boil the potatoes, peel and grate them
Fry the mustard seeds in the oil until they start to pop
Add the cumin and the turmeric, mix and turn off heat
Add the rest of the ingredients and mix
Add the potato and mix
Mix all ingredients of the dip and set aside
Heat oil for deep frying
Make balls of the potato mix about the size of a tennis ball, dip them in the dip to cover all surfaces and fry until golden
Remove and put on a paper towel to absorb extra oil
