Koobana is a slow cooked dough which can be prepared with different fillings.
This recipe is for Koobana with olives, but one can replace or add other ingredients such as, chicken, beef, various nuts, fresh or dry vegetables and more.

2 cups general purpose flour
½ cup of drained olives
1 tsp dry yeast
½ tsp Salt
1 tsp sugar
4 tbsp Olive oil


Soak the olives in fresh water for 2-3 hours until salt is lowered. The longer you soak the less saltier the olives.
In a large bowl prepare a dough by mixing the flour, the yeast, the salt and the sugar. Add warm water and blend until firm dough is achieved.
Cover the bowl with wet towel until the dough doubles in volume.
Open a whole in the center of the dough and feel it with the olives.
Close the whole so the dough covers the olives securely.
Put the olive oil in a plate and drop slowly the dough ball into the olive oil. Turn the dough so the oil covers the whole surface of it.
Drop the dough ball carefully into a small pot and cover it.
Cook in an oven in 225 def F (100 deg C) for about 2 hours until golden. Check the dough from time to time and make sure that the dough is not burned.
When ready, cut it as a pie and serve.
You may also cook on a top range in low heat while covering the pot top with a towel (be careful not to start a fire with the towel, it should be high enough away from the heat).
