1 lb basmati rice
1 lb carrots (about 3 carrots)
2 onion
2 tbsp sugar
½ cup water
½ tsp salt
6 tbsp Olive oil
Directions:
Soak rice in water for 1 hour
Bring to boil 6 cups of water with 1 tsp salt
Drain the rice and add to boiling water
Cook for about 10 minutes until half cooked and drain
Peel and cut carrots into small cubes (about ¼ inch)
Fry the onion in olive oil until golden
Add the carrots and keep frying for 10 minutes
Dissolve sugar in ¼ cup water
Add to carrot and cook in low heat for 5 minutes
Add the cooked rice, mix, cover and cook for ½ hour over low heat
