You may pick assorted vegetables such as cabbage, carrot, celery, eggplant, etc.
Wash the vegetable, drain and cut them to byte size pieces
Put them in a jar and press well to minimize space in between
Prepare a mix of 4 cups water, 2 tbsp salt and 3 tbsp vinegar and pour over the vegetables to top them
Cover the jar with a tight lid and let it sit for at least a week
