Dough:
2 cups flour
1 pack dry yeast
½ tsp salt
1/3 cup water
Filling:
1 pound fresh spinach
1 chopped onion
Juice from 1 fresh lemon
1 tbsp olive oil
Salt
Pepper
Directions:
Dough:
Mix all ingredients and knead until smooth dough is achieved
Filling:
Boil a quart of water with ½ tsp salt
Add the spinach and cook for 3 minutes and drain
Cut the spinach to stripes
Fry the onion in the olive oil until golden
Add all ingredients and mix
Roll the dough flat to 1/10 of an inch
Cut circles using a tool or a cup of a jar
Put 1 tsp (or more depending on the size of the circle) in the center of the circle and lift the perimeter up and pinch to seal
Pre heat oven to 350 deg F
Brush the top of the pocket with olive oil and bake around 15 minutes until golden
