Ingredients:


1 whole chicken
1/2 orange sliced with the peel
1 rosemary branch
12 dry apricots
6 dry figs
1/2 cup peeled pistachios
1 whole garlic
black pepper
Salt
Olive oil
Pam spray


Directions:


Trim the garlic head so all cloves heads are trimmed
Put the garlic on a piece of aluminum foil and sprinkle salt, pepper and olive oil on it
Wrap it and bake for an hour in oven heated to 400F
In a food processor chop the apricots, the figs and the pistachios
Stuff the crushed fruits between the chicken body and the skin as much as possible (make sure not to tear the skin and do not stuff close to the openings in the skin)
Stuff the inside of the chicken with the orange and the rosemary
Tie the chicken openings with a cooking thread
Squeeze the garlic cloves out to its aluminum foil, paste and mix with any liquid left there
Spread and rub the chicken skin with the garlic paste
Spray the chicken with Pam spray and bake in oven at 425F for 1.5 hours
Brush the chicken with the liquid from under the chicken a few times during the baking
When chicken has golden, turn off heat and let it rest for 10 minutes in the oven
Remove the threads and the orange and the rosemary and serve
