Ingredients:


1 whole chicken
1 sliced onion
2 chopped garlic cloves
1 cup pitted and chopped prunes
1 chopped apple
1 cup chopped dry apricots
1/2 cup raisins
1 tsp sugar
1 tsp cinnamon
1/4 tsp turmeric
1/2 cup orange juice
1 tbsp olive oil
2 tbsp water
1/2 tsp black pepper
2.5 tsp salt


Directions:


Rub the surface with 1/2 tsp salt
Golden the onion and the garlic with 1 tbsp oil
Add the prunes, the apricots, the apple, the raisins, t tsp salt, cinnamon, black pepper, trumeric and the sugar and mix then add 2 tbsp water, mix, cook for 4 minutes and turn off heat
Stuff the chicken with the stuffing and tighten the openings with baking thread
Heat oven to 425F
Pour the orange juice into the pan or pot and put the chicken over, cover and bake for 15 minutes
Lower heat to 375F and cook for about an hour and a half while wetting the chicken with the liquids under it from time to time
Remove the cover and continue to bake until golden and serve
