Ingredients:


2LB beef (neck or shoulder or any other tender meat)
¼ cup olive oil
3 cups of dried fruit (dates, plums, apricot, raisen) cut into small cubes
3 carrots, cut into cubes
2 sticks of celery, cut into cubes
2 onions cut into cubes
1 cup red wine
1 stick cinnamon
3 tsp ground ginger
1 tsp cumin
3 bay leaves
2 tsp dried cilantro
2 tsp turmeric
1 tsp cloves
½ tsp Salt
½ tsp Black pepper


Directions:


Heat the olive oil in a pot, when oil is hot fry the meat on all sides and take it out. In the same pot add the vegetables and fry until gold, then add the wine, the dried fruits, the meat and all the spices except the salt and pepper.
Cook about 2 hours in low heat until meat is tender, then add the salt and the pepper and cook additional ½ hour
