1½ cups flour
2 tsps baking powder
¾ cup dried sweetener
¾ cup soy milk
2 tsps vanilla extract
¼ cup oil
1 egg substitute (to equal 1 egg)
1. Preheat oven to 350 degrees F.
2. In a large bowl, stir together the flour, baking powder, and salt.
3. Add the sweetener, milk, vanilla, oil, and egg replacer and mix together gently until just mixed.
4. Pour into a lightly oiled cake pan and bake for 25-30 minutes.
5. Check with a knife to see if done.
6. When cooled, ice and serve.
